Tasting Note:

Veronique Sanders and team have produced another excellent Haut Bailly in 2012. This was a year which required lots of work in the vineyard to restrict the yields and ensure full maturity. A green harvest was undertaken in July and another thinning was undertaken for the Cabernets post veraison. The harvest commenced on the 27th of September and finished on the 15th of October and yields were 38hl/ha. Produced from 60% Cabernet Sauvignon and 40% Merlot, the bouquet is a heady mix of griotte liqueur, stones, Amaretto biscuit and almond oil. This is vibrant, concentrated, cashmere textured with lots of depth, layers of fruit and fine tannic structure.
