A Lovely, great value Bourgogne from one of the great young stars of the Cote de Beaune. Thierry Pillot is making decidedly pure, crystalline white Burgundies with plenty of verve and tension to them. Even in richer vintages such as 2015, there is great clarity of flavour and definition here to temper the naturally fleshy nature of this warmer year. Round but bright notes of citrus rind, greengage, roasted almond, herb butter and rock salt burst from the glass. A beautifully-made, accomplished Bourgogne from the Chassagne and Remigny communes, aged in very little new oak, only 8%
