Tasting Note:

A rare Bouzy Blanc de Blancs from a mature vineyard situated lower down the slopes than Maillerettes with very thin top-soils before the vines hit the chalk bedrock. Full south facing, planted in 1961, another mother site for the Paillard’s selection massale programme, this combines a ripeness from aspect with a gripping minerality from the purity of the chalk soils. A spiced note that runs towards ginger melts into cream and herbs, before the corseting crushed chalk note kicks in. A wine of fluidity and finesse with notes of butter, ripe citrus and sweet cream on the finish. Mottelettes sees a full five years sur lie prior to disgorgement with just 2.5 grams of dosage.
