Tasting Note:

Wild fermentation aromas clear to reveal crisp pear, green apple and white flower aromatics. On the palate this has a real sense of purpose; cool white flower and mint flavours set amongst smooth river stones and a tug of salinity on the finish. Dellchen is a rare vineyard that brings together two entirely different soil types, with 1-2m of slate on sitting atop volcanic bedrock.
