Albillo is a Spanish white wine varietal planted primarily in the Ribera del Duero region but also found in areas like Madrid, Ávila and Galicia. A relatively neutral grape, it has a light perfume aroma and a high glycerol index which confers smoothness to the wines it makes. It is sometimes added to red wines in Ribera del Duero for added aromatics. It is an early ripening variety and in central Spain is typically harvested in mid-August.
