Tasting Note:

A 1.2ha single vineyard average sixty years old of which less than 4000 bottles are made. The wine is aged for 6 months sur lie in steel tank followed by a year and a half in bottle resting in La Sibilla’s cool, rock-hewn cellars. A bright lemon colour with a golden tinge the regular Falanghina does not have. A rich and textured wine, initially, this requires time to open up a little and reveals its full array of flavours. The fruit profile is nectarine with a hint of green apricot whilst a honeyed note through the mid palate provides some viscosity which acts as a buffer to the salty volcanic notes. The intense finish sees a return to more crystalline, smoky, mineral qualities. A compelling, serious wine that demands plenty of time and attention.
