Tasting Note:

The typically pale pink colour leads to a deceptively intense and flavourful palate. A touch closed initially, after a little aeration the flavours flood forth ! A very unique and captivating mix of savoury herbal notes, cherries, flowers, wild strawberries, rose hip, salt, pepper spice and cured meat. There is nothing quite like this, and despite the broad spectrum of diverse flavours, flows elegantly and seamlessly across the palate. The Domaine started producing a separate cuvée of Poulsard in vintage 2015, from vineyards they had taken over from Jacques Puffeney. Poulsard, sometimes also called Ploussard, is an old-established, emblematic Jura grape varietal that produces a deceptively pale wine, with a lot of personality. Their Poulsard vineyards are in Arbois and in Montigny-les-Arsures. Their age varies between 25 and 60 years, and they grow on marly and sometimes sandy limestone soils. Poulsard is a fragile grape, that needs to be harvested within a short time window, between underripe and overripe. Vinification is like that of Pinot Noir or Trousseau. They destem the entire crop and gently pumper over the juice without punching down. After fermentation, the Poulsard is aged in a large foudre until bottling.
