Round, full, aromatic and caressing – a percentage of the Estate Pinot Gris still comes from the first plantings of Pinot Gris made outside the Old World. Winemaking is protracted, the estate bottling seeing a full year on its lees, far longer than most Pinot Gris around the world, with spontaneous fermentation and full malolactic fermentation. The result is a wine that parades rich, fruit ripeness and yet retains a supple freshness as it coats the palate. There’re more to this than meets the eye, and any suggestion of sweetness is an illusion as the wine is totally dry.
