Tasting Note:

Semillon is one of the historic grapes of the Swartland, going back a very long way. Over the years Semillon was gradually replaced with other varieties, but David & Nadia continue to use it as blending partner in the Aristargos. The volume of Semillon production they have access to is tiny, but enough that it would overpower the Aristargos, thus, taking on responsibility for the vineyards, they decided to bottle a single varietal under the more junior “Topography” label. Here, in an effort to increase freshness without picking too early, the grapes spend seven days on the skins, giving it a tangy mouthwatering acidity and riper yellow fruits.
