Tasting Note:

In a marginal, cool climate like the UK, the key is getting acidity right. When it comes to still wine this means an extreme green harvest (around 50%) to encourage ripeness of fruit and lower acidity. If it is too high then the fruit will go in to the sparkling wines. Luckily, the conditions were right in 2013, with the Chardonnay spending 9 months in 3 year old French barrique. Full malo and fermentation in oak softens the edges leading to a wine of yellow plums and white peaches, with creamy red apples and orchard fruit. Alcohol comes in at a very attractive 11.5%.
