Dom Perignon 2002 Plenitude 2 Release
03 July 2019

Dom Perignon’s Plenitude system is starting to embed itself in the calendar of releases as a genuinely interesting alternative vision of Dom Perignon vintages. The concept is simple, even if the maison’s explanations of the plenitude system are anything but. Produced in a highly reductive, oxygen-free style, Dom Perignon is always famously slow to evolve, and the initial offering is always better with a few years bottle age. Ageing under cork is seen as one side of the curve, a slide towards eventual decrepitude, while ageing sur lie tends to represent an upward curve, the presence of lees seeming to imbue the wines with a sense of regeneration and life.

Choosing their moments carefully, the idea behind P2 is that it offers clients the chance to experience late disgorged DP released at the moment new layers start to reveal themselves. In the case of 2002, a much-lauded vintage for Dom Perignon and Champagne as a whole, the difference between ageing under cork and sur lie is profound. 2002 was a ripe vintage that Chef de Cave Vincent Chaperon sums up simply as ‘golden’. The initial disgorgement is absolutely delicious today. The taut golden flavours are starting to blossom into warmer yellow fruits, buttery pastry and honeyed nuts, while the original mineral component is receding to make way for sense of flesh and dark fruited richness. If you have some, it’s a nice time to open a bottle – you will not be disappointed. P2 on the other hand, being aged far longer sur lie and only recently disgorged, takes that golden fruit but at the same time retains so much freshness and vibrant energy, you sense it is only just beginning its upward trajectory. There’s a sense of hidden layers, an energy and drive, which, combined with something more smoky, savoury and mineral lends itself to a Champagne of incredible breeding and definition.    Read More
