Tasting Note:

This lovely Linkwood comes from a special small batch matured for twelve years in refill casks, then set aside to double mature for more than a quarter of a century in four casks of new Pedro Ximénez/Oloroso seasoned American Oak. It is rare to use new American Oak, even rarer to season it with PX/Oloroso, and rarer still to carry out a long double maturation in such highly active casks. Part of an extensive trial of different maturation processes, this triple-rare expression has given us a Linkwood of incredible depth. The rich flavours and aromas of a PX/Oloroso-seasoned cask are deeply integrated with the creamy texture and spicy, toasted characters brought by the new American Oak. Profoundly rich, the nose offers notes of dark, moist Christmas cake, mince pies and crystalised orange peel, backed by polished oak. The texture is smoothly creamy and the sweet taste is intensely fruity, with rich notes of ripe plum. The sweetness stays throughout, the second maturation also contributing to an oaky dryness. A drop of water even increases the sweet smoothness.
