
Cabernet Sauvignon, Philip Togni Vineyard, 2015
Continuing their practice of releasing ten-year-old library stocks means it is the turn of the 2015 to be released. Coming from a vintage that produced generous, pliant wines, the 2015 is popped and poured and is invitingly open for business; full of ripe cabernet aromas set amongst the very first stages of an aged bouquet. I’d absolutely love to see it after two hours in a decanter, allowing those aromas to unfurl further. Ripe mountain flowers, exotic spice and dark berries prove a compelling mixture. On the palate it offers up notes of mulberry, liquorice and squid ink straight off the bat, with black cherry and sweet spice below, culminating with flavours of roasted plum and Valrhona chocolate. Ripe sweet tannins give it all structure. “We see a bit of ripeness here by our standards” Lisa offered, which illuminates their philosophy as much as the wine. Coasting at ten years of age…

The 2015 Cabernet Sauvignon Estate is positively ravishing today. This is the best bottle of the 2015 I have ever tasted by a pretty significant measure. Crushed flowers, graphite, blood orange and grilled herbs soar from the glass. The strong savory profile, dark-toned fruit and incisive mountain tannins are classic Togni. Still quite youthful, like Philip Togni himself, the 2015 promises to drink well for another 15-20 years. It's a magnificent, towering wine in every way. Yields were down 50% because of poor weather during set. Harvest began on September 9 during warm conditions that were unusual at the time.
Medium garnet-purple colored, the 2015 Cabernet Sauvignon Estate has a very classic nose of cassis, warm plums and crushed blackberries with notions of cigar box, garrigue, damp soil and truffles plus wafts of menthol and underbrush. The palate is medium to full-bodied with a firm frame of grainy tannins and wonderful freshness, finishing long and minerally.
