Champagne Guiborat is a family-run grower estate based in Cramant on the Côte des Blancs, with a history of viticulture stretching back to 1885. Today, fifth-generation vigneron Richard Fouquet continues the family tradition alongside his wife Karine, an oenologist whose expertise complements Richard’s deep knowledge of the vineyards and cellar. The family spent four generations farming the vineyards and selling their grapes to the grandes maisons before Richard returned to Cramant in the 1990s, determined to produce Champagne from the family’s finest holdings. In 1996 he made his first vintage, initially setting aside around 3.5 hectares of the estate’s best Grand Cru parcels in Cramant and Chouilly, while continuing to sell fruit from the remaining vineyards. The wines are built around old-vine Chardonnay grown on the deep chalk of the Côte des Blancs, with a focus on purity, freshness, precision and a clear sense of terroir. Richard and Karine work parcel by parcel, favouring gentle extraction, separate vinification and an approach in which the natural acidity of the chalk remains central to the wines’ character. The result is a distinctive range of grower Champagnes that combine the finesse and linearity of Grand Cru Chardonnay with considerable depth and mineral definition, offering a particularly compelling expression of Cramant and the wider Côte des Blancs.
