A 100% Chardonnay made in the traditional method, fermented first in oak casks and then a secondary fermentation in bottle. Disgorged in 2021, this saw an impressive nine years on the lees, resulting in a toned, sophisticated Sparkling, exuding beguiling notes of citrus and flowers with a fine yeasty, biscuity complexity. Super-fine bubbles and all on the fresh, dry end of the spectrum, there really is much to admire here.
