Cairanne, Haut Coustias, Blanc, 2021

The Haut Coustias Blanc is a single, particularly stony plot at the top of the slope, made up primarily of Roussanne and Marsanne, with small proportions of other varieties in order to quality for appellation status. Enticing on the nose, waxed lemons, freshly cut white apples and flowers. Juicy, with more structure and a longer finish, the 2021 has a lovely purity and grip to it. Aged for six months in a combination of concrete egg and old 12HL wooden cask. With time this should develop subtle notes of almond and honey.
