Eric Forest is part of a new generation of growers in the Mâconnais who have quietly redefined expectations for white Burgundy at this level. Based in the village of Vergisson, at the heart of the Pouilly-Fuissé appellation, Forest farms a small domaine with a clear focus on precision, site expression and drinkability. His wines offer an increasingly compelling alternative to the more famous villages further north, combining limestone tension with generous fruit and a finely judged touch in the cellar.
Forest established his domaine in the late 1990s, building on family holdings but quickly moving towards a more quality-driven, terroir-led approach. Today he works predominantly with old-vine Chardonnay across Pouilly-Fuissé, Saint-Véran and Mâcon-Vergisson. The vineyards sit on the dramatic limestone escarpments of Vergisson and Solutré, where shallow soils and high exposures bring natural freshness and structure. Many parcels are planted on steep slopes, which limits yields but enhances concentration.
In the vineyard, the approach is thoughtful and increasingly organic in practice, with careful soil management and a strong emphasis on healthy fruit. Harvesting is by hand and timing is critical, with Forest seeking to balance ripeness with acidity. The aim is not power but clarity.
In the cellar, the philosophy is one of minimal intervention. Fermentations are carried out with indigenous yeasts and élevage takes place in a combination of stainless steel and oak, with only a modest proportion of new barrels. The use of oak is subtle and well integrated, allowing the underlying terroir to speak. Lees ageing is used to build texture, but without sacrificing energy or definition.
The style across the range is consistent. These are wines that emphasise purity of fruit, mineral drive and balance. Pouilly-Fuissé bottlings show the most depth, often combining ripe orchard fruit with a saline edge and a gentle creaminess from élevage. Saint-Véran and Mâcon-Vergisson wines are typically more immediate but retain a pleasing tension and length that sets them apart from many peers in these appellations.
Recent vintages have further elevated the domaine’s standing, particularly following the introduction of Premier Cru classifications in Pouilly-Fuissé. Forest’s holdings in some of these newly classified sites are worth noting, as they underline the quality of his vineyard portfolio and the direction of travel for the estate.
For buyers, Eric Forest represents excellent value within Burgundy. The wines deliver a level of precision and site expression that is increasingly rare at these price points. They are approachable in youth but have sufficient structure to develop over the medium term, gaining complexity without losing their freshness.
