
Chablis, Vaillons, 1er Cru, 2017
A classic example of Vaillons – silk, citrus and flowers. Perhaps not the out and out intensity of Thomas’ other Premiers Crus, but charming for its sheer beauty and fruit expression. A satin like texture cloaks some beautifully detailed, scented flavours of fresh cut flowers, yellow fruits and citrus blossom. Aged in a mixture of used demi-muid barrels and steel tanks for two years.

The 2017 Chablis Vaillons 1er Cru is bright and nicely focused, with lovely floral and stone fruit character and mid-weight character. It is also the only wine in this range made from purchased fruit, and that makes a huge difference, as there is just a bit less depth here than is found in the other wines. Soft and understated, the 2017 will drink well with minimal cellaring.
