Diapason, Grand Cru le Mesnil sur Oger (the new name for Pascal’s Le Mesnil cuvee). The idea and name stem from the concept of bottling one terroir (Mesnil), so you see one pure note of Champagne, just as a Diapason (French for tuning fork) gives you one pure note. This is superb blend of 2009 (60%) and 2008 (40%). Disgorged after over 7 years sur lie. A touch of butter, then very fine taut Chardonnay notes that open into a vinous and pure expression of Mesnil minerality. This is very pure and focused, but with a sense of supple fruit behind the stones. Ample yet focused. Absolutely the perfect accompaniment to a warm foie gras and bayonne ham brioche roll….
