Domaine de la Janasse

In 1967, Aimé Sabon came back from his military service. Taking over his father’s vines, he built his own cellar and in 1973, Domaine de la Janasse was born. Expanding plots and learning about new terroirs, the estate has grown from some 15 hectares to more than 90 hectares, today.

In 1991, after a technical diploma in viticulture and oenology, Christophe Sabon –Aimé’s eldest son– came back to La Janasse. In 2001, Isabelle –Aimé’s daughter– graduated as an oenologist and joined the team.

La Janasse covers a mosaic of terroirs, these parcels brings great complexity to blending. All the work carried out in the vineyard is with the aim of obtaining the best ripeness and concentration of flavours in the berries and ultimately, the best expression of the soil.

Harvest takes place from late August to mid-October, grapes are twice-sorted, with partial destemming from 50% to 80%. Grenache parcels undergo 2 to 4 days cold maceration. Wines are transferred into barrels as quickly as possible. Grenache is matured in foudres, Syrah and Mourvèdre age in barrels. The wines remain in wood for 12 to 14 months and undergo one or two racking. The wines stay all winter in tanks in order to be clarified and are bottled in early spring.
