To the slightly syrupy peachiness of the corresponding Spätlese, this Auslese adds a glaze of quince jelly as well as a welcome diversity of cooling green herbal essences. Even more so than in the case of that Spätlese, this wine’s high acidity is really hidden: the palate feel is soft and expansive, and the finish soothingly sustained as well as subtly honeyed, but without much primary juiciness. There was around 20 percent dry botrytis in this fruit, with a portion of more affected fruit that was picked alongside having been vinified separately as a three-star Auslese.
