This has more dimensions still. Very salty but also a wonderful sense of light refracting; crystalline flavours that shower the mouth in light and salt and zesty sparks of citrus. Intense, powerful, focussed and very long. A touch of spontaneous fermentation aroma adds complexity to the green peach, apricot kernel, salt and cut grass finish. Multi-dimensional and rather brilliant.
