The 2016 Valdecanada comes from a cooler vintage and is quite austere. It was produced in a similar way as the 2015, matured under a veil of flor yeasts in the Cabildo winery. The soils are very shallow, and the wines have a very stony palate and feel really cool climate. Austere and somewhat rustic, with character. 1,700 bottles produced.
