A blend of 70% Auxerrois and 30% Pinot Blanc from old vines on silt, sand and gravel in the Clos des Capucins. The natural fruit weight is neatly counterbalanced by pithy acidity, with notes of lemon, green apple, green almond and a touch of salt, adding a light grip on the finish. Aged for 8 months in old oak foudres. Ideal as an aperitif or alongside a light lunch.
