The 2025 Les Griffons de Pichon Baron is maturing in 50% new oak for a planned 15 months. This has a relatively light bouquet that unfolds in the glass, mainly black fruit, cracked black pepper, pencil shavings and bay leaf. Just a light briny sea spray scent sits in the back seat. The palate is medium-bodied with chalky tannins, fine acidity, gentle grip and a balanced, off-dry finish that lingers in the mouth. A step up from the previous vintage.
This is highly appealing, a little more Merlot in the blend and certainly it gives a ripe roundness but the location of these Merlots always adds structure also. Energy, black fruit, campfire, very enjoyable. 50% new oak. 3.67 pH.
The 2025 Les Griffons de Pichon Baron, a blend of 62% Merlot, 34% Cabernet Sauvignon and 4% Cabernet Franc (50% new oak), reveals aromas of spice, dark berries, cedar and licorice, with well-integrated oak. Medium- to full-bodied, dense and structured, it’s built around a fleshy core of fruit framed by youthful tannins and concludes with a long, ethereal finish. It's a classical expression at this address, combining the brightness and density inherent to the vintage.
