Justerini & Brooks Tasting note
Vincent Dauvissat, Chablis, Vaillons, 1er Cru, 2018

The soils here are deeper and more clay-orientated than in Sechet, giving a fleshy, open and voluminous style wine. Peachy and floral citrus fruit, broad and alluring, immediately seductive with a salty twist to the finish adding a bit of spark to the wine.

The 2018 Chablis Vaillons 1er Cru is such a gorgeous wine. Specifically, the 2018 expresses the natural richness of the year and yet retains a good bit of freshness and focus as well. Creamy, silky and pulsing with energy, the Vaillons has so much to offer. Lemon confit, white flowers and mint are beautifully laced together throughout.

Vincent Dauvissat

An icon for Chablis and artisan winegrowers worldwide. Vincent Dauvissat's aim is to hand-tend vines with the highest respect for nature possible and to harvest fully ripe fruit that will result in wines which reflect their origins. This means Vincent often picks later than his peers, as he searches for full phenolic ripeness. Winemaking is low intervention, to allow the pure fruit and vineyards' terroirs to shine through in the wines. After malo, ageing is in neutral 6-8 years old small oak barrels. His are truly authentic wines of great character, purity and minerality. They are famously reticent in their youth but reward hugely with age.
