This is an especially expressive and detailed Champagne from Pascal, a cascade of white flowers, white stones and fine lemon zest on the nose – there’s almost an eau de Champagne quality about this (in the best possible way!). The palate has great breadth and energy, structure and bite too, finishing with autolytic notes of fresh bread and warm pastry. This has all the Doquet autolysis character we love, but with the extra backlit citrus brightness, precision and intensity of a great vintage. Top drawer Blanc de Blancs that shows off the richness of southern Cotes des Blancs Chardonnay alongside the tension and intensity of the 2008 vintage. Disgorged May 27th 2020 with 3.5 grams of dosage. Certified Organic the grapes for this cuvee come from five of Pascal’s best parcels in Vertus. Vinified in oak barrels with indigenous yeasts.
