Each grape variety and terroir are vinified separately. The grapes are destemmed before a very short maceration or direct pressing. Then, the musts are cold clarified before fermenting between 15° and 18°C. The wines (from the different grape varieties and terroirs) are blended then aged in stainless steel and concrete vats. They are bottled in winter and spring.
