A touch of spontaneous fermentation leads to layered, multifaceted aromas of wildflowers, lemon zest and cool wet slate. On the palate a remarkable sense of balance pervades, with a translucency to the flavours that allows them to feel complex, yet illuminated. Sweet pea, yellow grapefruit, fresh lemon and rock salt, white flowers and fine crushed slate. Beautifully balanced it is hard to imagine such a poised, pitch perfect GG from the Ruwer just ten years ago. Crystalline and yet silky smooth – a beauty.
