
Pares, Spätburgunder, 2020
Historically the most famous vineyard in Ingelheim, Pares is also characterised by limestone and silt. In 2011, Simone Adams cleared a parcel that had been left to grow over and planted it with her own massale selection of the Ritter clone – this shows affinity with whole bunch fermentation as the stems lignify perfectly. Bright and vivid, “right up to the eyes”, we wrote first time around, by which we mean coiled acidities, present tannins and tons of upward, long term potential. A hugely exciting discovery for us.

From a mix of Swiss and German clones planted only 10 years ago, the Ingelheim 2020 Pares Spatburgunder offers a generous, deep, sweet, very elegant, concentrated yet fine and fresh bouquet of ripe dark, tart fruits and spicy phenols as well as some licorice nuances. Silky, fresh and vital on the palate, this is a crystalline, juicy/fleshy and well-concentrated Pinot with remarkably fine tannins and stimulating salinity on the elegant and Burgundian finish. Lush but refined and balanced, it was aged in 20% new pieces for 18 months from a range of cooperages. This is a gorgeous wine, and the best is yet to come, when the vines will have reached 20-30 years of age. 12.5% stated alcohol. Natural cork. Tasted in July 2023.
