The 2021 Pares Spatburgunder offers a pure, fresh and intense, finely iodine-scented and peppery bouquet of black berries, cassis and other forest berries. Silky, smooth and round but also tensioned and finessed, this full-bodied, voluminous, persistently intense and aromatic Pares reveals ripe and spicy tannins that intertwine superbly with the saline acidity. The finish is very intense and aromatic yet still shows a certain astringency that asks for longer bottle aging. It's a rather masculine Pinot. After 18 months in pieces, it was bottled unfiltered in June of this year with 12.5% stated alcohol and a natural cork. Tasted at the domaine in November 2023.
