Chiselled and hewn, this doesn’t just feel like it comes from the earth; it feels as though it is still part of it. Calcareous, chalky and saline, with a remarkable mineral intensity, it pulses with lime zest, lemon rind, grapefruit, thyme and verbena. The salty oyster shell finish seems almost endless, lingering for minutes, if not days.
