A touch of spontaneous fermentation frames the nose before exotic red slate notes appear then clear, energetic, wild white berry fruit, a touch of sweet peach. On the palate, a lick of fizzing, wild, hard to pin down fruit; yellow fleshed, with red slate spice. This is very intense yet also quite gentle structurally. The 2021 Nierstein Hipping GG offers a clear, pure, intense, beautifully wild, spicy and stony bouquet of fresh yellow fruits. Savory and grippy on the palate, this is a spicy, elegant and finely grippy Hipping with a salty, tensioned, well-concentrated and stimulatingly crunchy finish. Still young but very promising.12.5% stated alcohol. Natural cork. Tasted in October 2022.
