
Domaine Evremond, Classic Cuvee, Edition 2, nv
The flavours evoke both Champagne and the Kentish orchard landscape in which these chalky vineyards sit. Mineral and bell-clear, the orchard fruit is still ever-present, but the greater proportion of Pinot brings darker, leafier red fruits of blackcurrant and cranberry, alongside aromas of lemon verbena, Pink Lady apple and pear tart. The chalky profile is visceral, with the terroir shining through impressively. A subtle note of salty oyster shell emerges on the finish, alongside hints of cream and almond.

The NV Brut Classic Cuvée Edition II is the second release of this Champenois-English project spearheaded by Taittinger. It is an estate-grown blend of 65% Pinot Noir, 25% Chardonnay and 10% Pinot Meunier, with 80% based on the 2021 vintage. Exquisite purity of fruit introduces the nose, which displays tart Mirabelle plums, lemon, white peach and pear with undercurrents of fresh cream and lemony sponge cake. The palate is equally vivid—light, svelte and pure but full-flavored with fine mousse supporting its light-footed elegance. This will undoubtedly benefit from some more bottle age.
