Bodegas Tradición is a unique Sherry Bodega that bottles consistently genre-defining, mature wines that are a veritable assault on the senses - in the nicest possible way. By focusing on very old casks that have not been chill filtered, blended, stabilized, clarified, sweetened, or seen the addition of sulphites, Tradición have proven themselves one of the very best in the business. Proudly bottling small-batches with the highest average ages on the market, the range includes a twelve year old Fino, approximately four times as old and complex as your average Fino on the high street, and an Amontillado, Oloroso and Palo Cortado with average ages far exceeding the thirty-year VORS designates on the label. A twenty year old Cream Sherry VOS is the best we have ever tasted, the range capped by a lusciously sweet yet layered twenty year old Pedro Ximenez VOS. Each category provides great intellectual stimulation. Like all great wines though, the Bodegas Tradición Sherries are as splendid alone as they are with the right dishes, with food pairing potential way beyond the simple aperitif.
