Unbelievably the youngest sherry in this bottling of Fino is 6 years old while the oldest hails from the late 1960s. Verily a thinking drinkers Fino this, with extraordinary savoury complexity, miso, chicken stock, flor and dried ceps leading on to lemon balm and yeast and crystalline saline notes. Long, crystal clear, intense and very moreish – a breath-taking Fino, complex large scaled but also balanced, as impressive as it is drinkable. Bottled without fining or filtration, from sherries averaging 12 years old.
