Packaged in individual wooden cases, perfect for gifting, the PX VORS, though labelled 30 Years in fact averages a mighty 40 years old. Counterintuitively, the VORS is less dense than the regular VOS 20 Years as it comes from a solera founded with vineyards in Puerto de Santa María, where the Atlantic influence is strong. Moreover, winemaking has evolved in the intervening decades, as producers nowadays select the most raisined grapes for PX. In the early days, grapes were picked with a little more flesh to them. In conjunction with particularly fresh Atlantic parcels, this unbelievable Sherry offers a breathtaking combination of chalkiness, salinity, fruit character and balsamic notes. Only 300bts are ever produced over a five year period.
