Laser-line fine boned acidity energises the wine here, with cracked black pepper and salt, curry leaf and dried cumin. Leafy raspberry fruit and a herbal streak fashioned from mint leaves and thyme, very long textured with a very fine acidity. Both fruity and savoury, stuffed full of edgy character and volcanic mineral complexity.

The 2017 Ignios Origenes Listan Negro Vendimia Seleccionada has to be the finest vintage for this bottling. It has a curious ashy nose that turned into something herbal with a little bit of time in the glass and ended up reminding me of a Chinon from the Loire. The palate was medium-bodied with abundant fine-grained tannins. This is a serious, cool-climate-like red, spicy and mineral, salty rather than sweet, austere and very apt for the table. 3,000 bottles produced.
