A bright, fragrant and spiced Pajana, surprisingly open aromas for this Cru, the palate is an explosion of enveloping bramble blueberry, cherry fruit with hints of mocha. Warm and rich but incredibly svelte and precise, too, lovely clear juicy flavours woven into a generous, mouth-coating texture. One of the classiest Pajanas of recent vintages. Pajana is a specific part of the Ginestra Cru, south-facing with sandy elements in the soil, different to the south-east sand-free soils of the rest of the Ciabot Mentin Ginestra, making for often very rich, powerful Barolos. The wine is aged in 80% new oak for two years before bottling.

The 2007 Barolo Pajana has clearly progressed to its secondary stage of evolution, its red fruit tinged with leather and mint, yet it has retained outstanding clarity and definition. The palate is well structured with vivid red fruit laced with tobacco and clove, discreetly fanning out toward the elegant, sophisticated finish. This has matured extremely well and has probably another decade on the clock. Tasted at the Vinous off-line dinner at La Trompette.
