Dark, brambly and crunchy with hints of cherry and balsamic, it becomes ever more lucid and accomplished as it opens up – benefitting hugely from a Burgundy glass. 75% of the blend comes from WO Darling and is fermented with submerged cap in amphora – a site that Donovan shares with Duncan Savage. The remaining 25% comes from the Swartland, raised in a combination of barrel, foudré and concrete.
