The Zillikens scoured the Rausch to select the single berries that went into producing one single fuder of Rausch Auslese in 2021. Smelling like fine honey mingled with elegant slate, this has a layering and persistence not found in the lower Pradikat wines, but also impressive lift due to the excellent acidity. The fruit - and there’s plenty of it - runs from fully ripe pineapple to passionfruit and guava.

A total lemon and floral hit, almost of narcissus, opens this spectacular 2021 Riesling Saarburger Rausch Auslese from the low yields of younger vines that shriveled beautifully. More air brings pineapple hints. There are around 10% botrytised grapes in here, most other grapes are just dried and shriveled, lending notes of candied lemon peel and candied pineapple, imbuing this with rich but always zest-edged sweetness. The mouth waters at this limpid, almost viscous liquid, and yet the acidity prevents it from coming across as luscious – this is merely sweet. The slightest hint of dark fir honey sets a gloriously bitter accent on the finish. This has 89.8g/L of sweetness against 8.1g/L of acidity. (Sweet)
