Where the Petrara is all charm and focus, the Ergon is a little more enigmatic, keeping the fruit at bay and instead providing more serious, savoury impact. Ergon is inspired by the Latin “energeia” to mean “force in action.” A selection of the best exposed plots on the estate, it is fermented with wild yeasts and aged on the lees in tank for 6 months.
