Bibi Graetz

Bibi Graetz is one of the best known and most respected winemakers in Tuscany. His Sangiovese vines produce beguiling, delicate wines, which showcase the potential of this somewhat maligned varietal. In his flagship IGT, Colore, and second label, Testamatta, one discovers pale, highly perfumed wines, with power, poise and silky tannins. Bibi leaves no stone unturned in the pursuit of brilliance, utilising high altitude vineyards, poor, stony soils and gnarled old vines, some as old as 135 years. In the winery he employs traditional open top barriques for fermentation, using wild yeasts, and elevage in old used barrels of varying sizes.
