Dido Blanc is produced from 50% Macabeu, 40% Garnacha Blanca and 10% Xarello, all of which are grown on white calcareous soils in different parts of the Montsant appellation. From 5-6 plots ranging from 25 to over 70 years of age, Dido is no floozie. Roughly 20% of the wine sees skin contact which adds freshness, grip and texture in a warm-climate context. Fermentation and maturation is carried out in large, neutral wooden vessels, finishing in concrete to bring the total to 14-16 months depending on the year. A true Mediterrean white, the 2019 offers up plenty of green olives, wild herbs and salted greengages with a creamy texture and some ripe autumnal fruit on the finish.
