This is the most botrytised Goldcap in the range, with 35-40% of noble rot in the blend, and the honeyed apricots, candied lemon peel, toffee and spun sugar notes betray that fact. Complex and gorgeous, almost baroque in character, as notes of acacia honey, mint, orange caramel and fresh figs gently reverberate across the palate on the long, seductive finish.

Here there’s no question about the influence of botrytis (even though Haag says it affected less than 20% of the raw material), given the dusty, prickly pungency of candied citrus peels, brown spices, and dried mushrooms on the nose. Behind those emerge scents of dried apple and quince. The palate is impressively rich and expansive, the finish soothingly sustained, but there isn’t the lift or the leavening influence of fresh fruit that characterizes Haag’s 2016 vintage Auslesen from other sites. “Those of my nobly sweet 2016s that feature botrytis need more time to reveal their potential vis-à-vis the ones from healthy fruit that already display finesse and precision,” insisted Haag.
