2018 Brut as in dry , S for Savagnin, and zero (°) for no dosage… There is new-born at Domaine du Pélican, a bubbly cuvée, made entirely from Savagnin. No sugar, no added yeasts, just the ripe fruit, 90% from vintage 2018 and 10% from vintage 2019 as it began fermenting. Disgorgement took place after 13 months. The ripe fruit gives the wine its vinous character, and the classic qualities of the Savagnin grape bring vivacity, tension, and vibration. The aromatics are bright and clean. The mouth is long and delicate. Domaine du Pélican wanted to add a bubbly to its range of Jura wines. For this, they have chosen to use Savagnin, THE great Jura grape, on its own, in majesty, in their Brut S° cuvée. As they say in French, the suit is not too large for it.
