    Some quince notes and sweetly-scented floral aromatics are followed by a palate with tremendous crunch and snap to it. A wonderful interplay of intense exotic fruits, solid structure and racy, mouth-tingling citrus freshness. Powerful but linear, crystalline and long. Savagnin is an extraordinary varietal which has the same DNA as Traminer. Because of its multi-faceted personality, there are many different ways to work with Savagnin. In Jura, the most common use of Savagnin is for oxidative wines under a veil of flor rather like in Jerez (sous voile), either as vin jaune (which requires 6.5 years in barrel sous voile), or simply Savagnin (2 to 5 years in barrel sous voile.) Savagnin ouillé, sometimes called Traminer, or Fleur de Savagnin, is the topped-up version of Savagnin, one that Domaine du Pélican has been producing since 2012. This cuvée is made of many different parcels located in Arbois and Montigny-les-Arsures. The soils are very diverse: multi-coloured Triassic marls; fallen rocks ("éboulis calcaires") of Bajocian limestone over grey marls; and Liassic marly limestone. The crop is lightly crushed before being pressed, and fermentation is in foudres and barrels. One third of the crop macerates with the skins for one night before being pressed. Elevage is in 500L barrels with 2% new oak for just over half of the crop. The balance is in foudres and vats.

    The 2018 Arbois Savagnin Oiulle´ is fabulous. It presents a beguiling mélange of dried apricot, white flowers, crushed flowers, marzipan, sage and chamomile. The savory profile works so well with the wine’s oily, textured feel, while a hint of reduction adds character. Even with all of its obvious exotic character, the 2018 retains more than enough freshness and minerality to give the wine a real feeling of vibrancy that is impossible to miss. Quite frankly, this is an eye-opening wine.
