    The 2021 Le Dragon de Quintus has much more to offer than the Troisième Vin, with baking spices and Provençal herbs infusing the open red fruit. The palate is medium-bodied with grainy tannins, a light-framed but fresh Saint-Émilion, delivering a dab of black pepper on the short finish. Fine. Just give it a year in bottle.
