Tasting Note:

A totally individual sparkling wine which pays homage to the long sparkling traditions of the Bairrada region. A solera method fizz with the oldest wines going back to 2007, it is produced from Bical, Baga and Cercial fermented in stainless steel and oak and aged for six months on the lees. 30% is drawn off each year for secondary bottle fermentation, at which point the young wine is added to the solera to replenish the 30%. Bottles see a minimum of 18 months before disgorgement. Toasty, nutty and salty with a tang of bitter orange, lemon and honey, some stone fruit and ripe candied fruits. Delicious and moreish.
